Nargesi or Spinach with eggs

Nargesi in persian means like daffodil because we put eggs as daffodils on top of this food.  It is really easy to make and healthy specially for those who are on a diet.

Ingredients

500 Grams Spinach

1 Average onion

A little oil

A pinch of salt

2 eggs

First of all cut spinach in 3 CM pieces then put it in a pan add salt and bake it for 10-15 minuts as it becomes soft.  Peel onion and slice it in narrow pieces.  Fry onion in a little oil as it changes to golden like colour.  Now fry the eggs in a little oil and do not stir it.  Pour spinach in a plate and spread it by spoon then put onions as a circle on it and put fried eggs in the middle.  

If you like hot foods, you can add a pinch of black pepper on the food.
