Hamis Baghali

Iranian foodsHamis Baghali or Mashed Fava Beans

Hamis is a traditional food in my home town, Dezful.  It is some kinds of baked and mashed beans but this kind is made with fava beans.

Ingredients

500 grams fava beans with outer skin

1 big onion

1 garlic

black pepper

olive oil

salt

1/2 tsp turmeric

oil

First cut two sides of fava beans skin then cook it for an hour in a pressure cooker with 2 glasses of water.  Mash fava beans and add turmeric and salt on it.  Peel and cube onion and garlic and fry it in oil as it's colour turns to golden. Serve fava beans in a plate and decorate it with fried onion, garlic, olive oil, black pepper and lemon juice.  You can eat this with bread.

It is a really healthy foods specially for those who are on a diet or vegetarians.

Pinto beans soup

1 glass pinto beans

2 carrots

1 big onion

1 potato

2 tblsp tomato paste

oil

1 tsp salt

1 tsp black pepper

1 tsp turmeric

First peel and cut onion in small pieces then fry it in a little oil until it turns golden colour. Add salt, pepper and turmeric then grate carrot and potato in the pot.  Add pinto beans and some glasses of water and let it boil until pinto beans cook completely as it mashed between your fingers.  Now add tomato paste and let it boil for another ten minutes.  It's ready.

You should put pinto beans in a bowl of water from the day before and change it's water several times.

Nargesi or Spinach with egg

Nargesi or Spinach with eggs

Nargesi in persian means like daffodil because we put eggs as daffodils on top of this food.  It is really easy to make and healthy specially for those who are on a diet.

Ingredients

500 Grams Spinach

1 Average onion

A little oil

A pinch of salt

2 eggs

First of all cut spinach in 3 CM pieces then put it in a pan add salt and bake it for 10-15 minuts as it becomes soft.  Peel onion and slice it in narrow pieces.  Fry onion in a little oil as it changes to golden like colour.  Now fry the eggs in a little oil and do not stir it.  Pour spinach in a plate and spread it by spoon then put onions as a circle on it and put fried eggs in the middle.  

If you like hot foods, you can add a pinch of black pepper on the food.

Fried Chicken Wing

Fried Chicken Wing

This is one of my special recipes.  I chose chicken wing because it bakes easily and it's full of flavours and fat.

Ingredients:

One Kilogram wing ( wingette or drummete)

1 tbl spoon oil

1 teaspoon turmeric

1 teaspoon salt

A pinch of black pepper

1\2 teaspoon red pepper

A pinch of cinnamon

1 teaspoon sesame

1 tbl spoon tomato paste

A pinch of curry powder

First put a pan on stove then pour oil in it and add chicken in it.  Let it
