Tarkhine is wheat seeds marinated in Dugh drink and dried with some local vegetables.

Ingredients

1 litre Dugh drink

1 tsp salt

1 tsp turmeric

1 tsp red and black pepper

3 big onion

oil

1 litre water

3 Tarkhine

1 cup green lentile

First pour water in a pot. Add salt, pepper and green lentile and let it boil meanwhile peel onions, cut it in half then cut onion horizontally in very narrow cuts that we call it Khelal.  Fry onions in a little oil until it becomes golden like then add it to the pot.

Now add Dugh to the pot and let it boil for another hour until it has enough water, not too watery not too thick.

Stir the soup sometimes because Tarkhine may comes to the bottom of the pot and burns.

Dezful Ghelye

Iranian FoodsThis food is one of traditional foods in my hometown, Dezful.  It is tasty and healthy and has a border taste between sour and sweet.

 

Ingredients

2 tblsp cut garlic

4 tblsp cut onion

1 cup black eye peas

300 gram meat

1 cup dried apricots

a pinch of salt

1 cup pomegranate  paste

3-4 tblsp suger

1 cup wheat

1 cup rice

First cook rice and wheat in water in a pot then cook onion, garlic, salt, black eye peas, meat in a pressure cooker for an hour.  Rice must cook for half an hour.  Then pour both materials in a pot, add sugar and pommegranate paste and let it boil for another 30 minutes in a pot.  As it becomes like a thick food and extra water vapourized, mix food and pour it in some bowls.  

Some like it hot but some people like me, eat this food after keeping in refrigerator for some hours.

It has all groups of foods that body needs so it's a healthy food.  

You can cook it sweeter than this by adding more suger but the original taste has both sour and sweet taste together.

 

 

Hamis Baghali

Hamis is a traditional food in my home town, Dezful.  It is some kinds of baked and mashed beans but this kind is made with fava beans.

Ingredients

500 grams fava beans with outer skin

1 big onion

1 garlic

black pepper

olive oil

salt

1/2 tsp turmeric

oil

First cut two sides of fava beans skin then cook it for an hour in a pressure cooker with 2 glasses of water.  Mash fava beans and add turmeric and salt on it.  Peel and cube onion and garlic and fry it in oil as it's colour turns to golden. Serve fava beans in a plate and decorate it with fried onion, garlic, olive oil, black pepper and lemon juice.  You can eat this with bread.

It is a really healthy foods specially for those who are on a diet or vegetarians.

Tahdig

Tahdig is the down part of a rice food, Polo and Chelu, on the pot that is crusty and delicate and Iranians love it very much.  Every kind of Tahdig in different foods has special taste that makes it unique.  Some of Tahdigs are just the rice that was fried on pot or maybe it is a bread, lettuce leaves, potato slices with a little sesame that is for pasta.

I will put different kinds of Tahdig in this post.Iranian foods

Khuresht Gheyme or Split pea  Stew

4 tblsp tomato paste

2 big onion

3 cup split pea

3 tsp salt

1 tsp turmeric

300 g meat with bones

1 potato

oil

water

First peel and cube onions and fry it in oil as it turns to golden colour then add meat, salt and turmeric and stir fry it as meat changes color.  Now cut tomatoes in half and grate it on meat.  Add tomato paste and stir fry it together.  Pour about 8 glass of water and bake it for about one hour in a pressure cooker.  Then add split peas and bake it for another 15-30 minutes.  It must have a thick texture so if it had extra water, let it vapourize.

Peel potatoes and cut it in narrow slices then cut it like stripes.  Then fry potatoes in about 1\2 cup oil and decorate Gheyme with these potato stripes.

Khuresht Gheyme always serves with baked rice.

 

Baghali Ghatogh or Broad beans with eggs

Baghali Ghatogh is a food of north of Iran.  It's really simple, healthy and tasty.  The main ingredient of this food is broad bean without it's two outer skins but most of people use another kind of beans Keshavarzi baghala

 

instead called Keshavarzi Baghala.  I dont know it's exact name in English so I will show you it's photo and  pls mention it's English name in comments if you knew this.  Baghali ghatogh is mostly serves with rice and fried fish but you can eat this food with bread.

Ingredients

One garlic

4 eggs

250 g broad bean

1 cup chopped dill

1 tsp turmeric

1 tsp salt

1/5 glass water

Oil

If you had Keshavarzi Baghala, you must put it in a bowl of water from the day before and separate it's outer skin but if you had broad bean, it is not necessary to do so.

Peel and chop garlic then fry it with beans in a little oil then add salt, turmeric and dill and stirfry it.  Pour water and let it boil until oil comes on the food.

Now break eggs on it and let it bake completely.

It's ready.

Khuresht Sabzi or Vegetables stew

Khuresht Sabzi is one of Iranians favorite foods that everybody loves it.  All of Iranians remember their childhood with good memories of Khuresht sabzi's scent specially in celebrations and family gatherings.  Every mom has it's own recipe but I mentioned my favorite one inspired by my mother in law's delicious food with lots of pepper but you can change the pepper as you like it.  I will explain how to cook Khuresht Sabzi's vegetables in next post.  We serve this food with cooked rice that I have explained it before.  You can serve this with 3 glass of rice.

Ingredients

500 g vegetables

1 glass pinto beans or black eyed peas

4 dried limes or it's powder

1 tip salt

1 tblsp lemon juice

1 tsp red pepper

1 tsp black pepper

2 dried pepper

300 g meat cubes with bones

1 tsp turmeric

Oil

water

First you should put pinto beans in a bowl of water from the day before and change it's water several times.

Fry meat in a tblsp oil then add salt, turmeric, red and black pepper and stiffly it until meat changes it's colour.  Add pinto beans, vegetables and about 8 glass of water.  Now make Small holes on dried limes and put it on the rest. 

Let it Cook in a pressure cooker for about an hour as meat and beans cooks completely and it could be easily mashed by a fork.

At the end pour lemon juice and let it boil for 5 minutes.  You can test khuresht at the end and if

you like, you can add more lemon juice or pepper as you like it to be.

If Khuresht seems a little watery, put it on fire to boil and vaporizes extra water.

 

 

 

 

 

Kashk

Diary productsKashk

Kashk is one of diary products special to Iran.  It produces of dried milk or yogurt and it has salty taste.  You can find it in pastrized form in Iranian supermarkets or as traditional forms in different shapes that must blend in a glass of water and boil for about 20 minutes before use.

Iranian use Kashk in cooking some of traditional foods like Kashk and eggplants and some soups.

Kashk is a really good product and it's a great source of calcium and protein.

Khoresht Alu Esfenaj or Spinach stew with dried plums

Iranian foodsIngredients

300 gram meat with bones

1\5 kilogram spinach

10 dried plum

1 tsp salt

1 tsp turmeric

1 tsp red pepper

1 tsp black pepper

oil

4 glass water 

2 average onion

2 tblsp pomegranate paste

First slice and chop spinach then bake it as it becomes soft and fry it in a little oil for some minutes.

Fry chopped onions in a little oil as it becomes golden like then add meat, salt, pepper and turmeric.  Pour water as it covers all and cook meat completely as it mashes easilly.

Now add spinach, pommegranate paste and dried plums and let it bake for about 15-30 mins as plums cooks  completely.

You can serve it with rice as I have explained in another post.  

Chicken with onion and potatoes

Iranian foodsThis is a simple food to make and you can serve it in french bread or white bread.

Ingredeints:

2 chicken breast

A little oil

1 teasp salt

1 teasp turmeric

2 big potato

2 big onion

First peel onions and chop it then fry it in a pan with a little oil until it looses weight or turns to golden.  Cut chicken in square pieces, add it on pan then add salt and turmeric.  If you like hot foods, you can add 1\2 teasp red or black pepper.  Fry it as chickens turnes it's colour to white.  Peel potatoes and dice it then add it on a pan.  Pour 1 glass of water, put the lid on the pan and let it boil for 15 minutes.  Nushe jan😊.

 

Dolme Bademjan, Guje, Felfel or Filled Eggplant, Tomato and Bell pepper

Ingredients

1 cup tarragon and savory

2 cup rice

200 grams ground meat

1 cup tamarind

3 tblsp tomato paste

A pinch of salt

A pinch of turmeric

A pinch of red pepper

2 eggplants

2 bell pepper

2 big tomato

First fill a pot with water.  When it statrs boiling, put rice on the pot and let it boil for 10 minuts then pour it in a colander.

Chop savory and tarragon. fry

Zereshk polo ba Morgh or  Barberry rice with chicken

This is one of the most delicious and beautiful Iranian foods that everybody lives it.  Combination of sweet and sour tastes plus saffron flavour makes it unforgottable food.

Ingredients

Zereshk or Barberry 1 cup

A pinch saffron

1\2 cup suger

oil

2 glasses rice

1 big onion

water

500 grams chicken

1 teasp salt

1 teasp turmeric

3 tblsp tomato paste

vermicelli

I wrote about how to make Iranian rice  and saffron in previous posts.  Now pour a tblsp oil in a pan, add barberry, suger and 2 tblsp water and fry it for 2 minutes.  Take some rice and mix it in a bowl with saffron water to have yellow rice.  You can mix it with barberry  and decorate it on rice or add yellow rice first and put barberry on the top.  If barberry suger was solid, you can fry it a little to use it on food.  Remember not to fry barberries a lot because it burns fast.  Barberry in Iran is mostly exists in dried form but you can use it's fresh one too.

Chop onion, pour a little oil in a pot then fry onion until it becomes golden like and looses it's weight Then add chicken, salt and turmeric.  Pour water as remains just 2 glasses of water in the eand and let it boil for 1-1\5 hours.  Take away chickens, pour tomato paste and vermicelli and let it boil for 15 minutes.  If you dont like this soup, you can wait until it's water vapourizes.

Fry chicken in a little oil and serve it with barberry rice and vermicelli soup.

Kalam Polo or White Cabbage rice

Tuna fish

This food is really easy and even if you do not like tuna fish, try it once.  You will love this.

1 Average onion

2 tblsp tomato paste

1 teasp turmeric

A pinch of black pepper

2 eggs

one Tuna fish can

First boil can in water for 20 minutes then peel and chop onion then fry it in can oil until it looses weight.  Add tuna fish, turmeric, black pepper and tomato paste and stir it for two minutes.  Now it is ready but if you like, you can break two eggs in it and fry it for some minutes.

Adas polo ghermez polo or rice with red lentiles

Ingredients

3 glasses water

2 glasses rice

2 glasses red lentils

1 onion

A pinch salt 

1 cup raisin

First chop onion and fry it in a pan until it's colour turns to golden then add washed raisins and fry it for a minute.

Take a pot, wash rice and lentils and pour it in the pot.  add salt and a pinch of turmeric and let it boil on fire until it's water vapourizes then add raisins and two tbl oil on it.  Put a lid on it and let it bake for 30 minuts.  It's ready.😊

Adas polo or Green lentils rice

Ingredients

1 Cup green lentils

2 Glass rice

Water

1 Onion

salt 

2 teasp turmeric

3 tblsp cinnamon

1 onion

1 cup golden raisin

500 Grams chicken or 250 Grams ground meat

First boil green lentils in a pot for 30 minutes until it bakes completely and it's water vapourizes.  Chop one onion then fry it in a pan until it turns to golden then add washed raisins and fry it for a minute.  You can use golden raisins or brown ones as you like.

Now pour water in a pot as you could bake rice in it plus the added materials.  Add a tblsp salt and let it on fire until it starts boiling then add rice and let it boil until it bakes, not raw nor soft.  Pour rice in a colander.  Add cinnamon, a teasp turmeric, green lentils and stir it then pour a little oil in pot and put half of rice in it then add raisins and add rice.  Add 2 teasp cinnamon, 1 teaspoon turmeric on the rice.  You can pour safron on the rice too that makes it more delicious.  Put the lid and bake it on stove for 30 minutes.

You can serve this food with chicken or ground milk as you like it.  First it's the chicken

Put chicken, a pinch of salt, a teasp turmeric and water in a pot and let it boil for an hour as it's water vapourizes or you can add vermichel and boil it to have a soup.

Second way:

Chop onion, pour a little oil in a pan then fry onions in it with a pinch of salt and 1 teasp turmeric until it's colour changes.  pour it on rice and serve it.

When rice baked, heat 1\2 cup of oil in a pan then pour it on rice to serve it.

some Iranians like to add brown vermichels to rice when it boils in the pot that we call it reshte polo"

Olivie Salad

Iranian saladIngredients

3 Big potatoes

1 small onion

A pinch of salt

A pinch of turmeric

2 Eggs

500 grams chicken

250 Grams picked cucumber

150 Grams pea

200 Grams mayonnaise or yogurt

First of all put potatoes in a pot full of water to boil for about an hour until you could press fork easily in it.  Boil eggs about 15 minuts too.  Put chicken in a pot, add salt, turmeric, some glasses of water then peel onion and put it in the pot and let it bake for about an hour until it's water vapourizes completely.  You can bake peas in it.  Now pick a bowl, peel potatoes and eggs then grate it.  Slice pickled cucumbers too then cut chicken in it and add peas too.  Mix all of the materials together then add mayonnaise and stir it again.  You can use a mix of half mayonnaise and yogurt but if you are on a diet, you can use yogurt with 2tblsp mayonnaise.

Keep it in refregrator for some hours and serve it cold with bread.  If keep it more hours it will have better taste.  Iranians eat this salad in celbrations, picnic or birthday party.🎈🎂🏞

 

Khuresht Bademjan or Eggplant Stew

This stew is eaten with rice that I learn it in another post.

Ingredients

300 Grams meat with it's bones

2 big onions

5 tblsp tomato paste

2 teasp salt

1 teasp turmeric

4-5 eggplants

oil

First of all peel eggplants then cut it's head and cut it in half.  Put it in a colander, add a teasp salt on it and let it to loose it's water for an hour.  Try to use thin and small eggplants that have black and shiny skin because they are fresher and sweeter.

Wash eggplants and dry it.  Pour oil in a pan and let it heat after that fry both sides of eggplants in it until it becomes golden.

Peel onions and cut it in four parts then slice it, wa call this kind of cutting as Khelal.  Pour a little oil in a pan then fry onions in it.  Add meat, a teasp salt and turmeric and fry it until meat changes colour.  Fry tomato paste in a little oil and add it to meat.  If you do not have tomato paste, you can peel and grate 3 big tomato and bake it in a pan for about 15-30 minuts then add it to the meat.

Pour about a litre water in a pot or pressure cooker and bake it about 1-2 hours until meat cookes completely and you had a tick stew.  we dont want a lot of water so if it was a lot of water in it, put it on fire again and let it loose extra water.

It's the time to add eggplants, boil stew for another 10 minuts and it's ready.

If it had not enough taste, you can add sth sour like a tblsp lemon juice or tamarind water.

Potato burgers

Iranian foodThis is a new special food I have learned it from my sister.  It is delicious and children like it very much.

Ingredients

4 big potato

1 teaspoon salt

A pinch of black pepper

200 Grams ground meat

1 tbl tomato paste

1 teasp turmeric

1 Small onion

First wash potatoes and boil it for about an hour until you could presd fork easily in it.

Now peel onion and chop it.  Pour a little oil in a pan then fry onions in it.  When onions loose weight, add ground meat, a pinch of salt, turmeric and tomato paste and stir it.  Let it fry for about 10-15 minutes.  Let it cool for some minuts. 

Peel potatoes and grate it then add a pinch of salt and black pepper and mix it.

Sib Tokhm morgh ghors or potato kebabs with egg

This is really good and simple food and Iranians eat this with vegetables, yogurt and Nan(bread).

Ingredients:

3 big potatoes

1 Average onion

1 egg

1 teasp salt

1 teasp turmeric

Fill a pot with water, put it on fire, put the lid and let it boil for an hour to bake potatoes until you could press a fork in it easily.  After that take potatoes and put them in cold water to reduce it's heat.  Peel potatoes and grate it in a bowl then add salt and turmeric and break egg in it.  peel onion and grate it on the bowl and mix it all together.

Now pour a cup of oil in a pan and put it on fire.  Wait until it becomes hot.  Bring a small bowl of water.  Put your hand in water bowl then put two spoons of the mix and make a circle of it in your hand as a small burger then put it in the pan and fry it until it changes colour to orange.  Now change it to fry it's other side.  Do the same for all of the mix.  Dont forget to put your hands in water because the mix is a little stichy.

Estambuli polo or rice with meat and potato

Polo is a kind of baked rice with different kinds of meat or vegetables and Estamboly means here a kind of yellow potato that exists in Iran and it's skin can be removed easily even by hands.  If you know it's name in English, ention it in comments.  If you had this potato,  it is better but f you dont, you can use every kind of potato available.

Ingredients

2 glasses rice

2 tblsp tomato paste

A little oil

1 potato

200 Grams ground meat

2 pinches of salt

1 teasp turmeric

1 onion

First chop the onion and fry it with a little oil in a pan then add ground meat, salt and turmeric for some minuts until it's colour changes then add one tblsp tomato paste and fry it for 5 minuts.

Now peel the potato and dice it.  pour a little oil in another pan, let it be hot then add potato and a pinch of salt.  Fry potatoes for some minutes.

Pick a pot and pour 3 glasses of water in it then add a pinch of salt, rice and a little oil and let it boil for some minutes until it's water evapourizes.  You can add a tblsp tomato paste, grond meat and potatoes and let it bake for 30 minuts until you could see steam on the pot's lid.

You can make it in another way too.  When you prepared meat and potato, you can fill a pot on fire, add salt and let it boil then add rice and keep it boiling for about 10-15 minuts.  Try rice if it was baked, you can pour it in a colander.  Knowing when it's the good time to stop boiling rice is depending on the rice because every rice has special time for boiling.  Be careful because Iranians like rice in a way that it is not raw not over cooked and smashed.

Then add tomato paste, ground meat and potato to rice.  Put the pot onfire, pour oil on it and add rice in it.  Now put the lid on it and let it bake for 30 minutes.

The second way has an advantage that you can eat a good Tahdig which is the rice or nan under the food that is delicious and Iranians love it.

If you are on a diet, you can boil potato in water for 10 minuts instead of frying it.

Fried Chicken Wing

This is one of my special recipes.  I chose chicken wing because it bakes easily and it's full of flavours and fat.

Ingredients:

One Kilogram wing ( wingette or drummete)

1 tbl spoon oil

1 teaspoon turmeric

1 teaspoon salt

A pinch of black pepper

1\2 teaspoon red pepper

A pinch of cinnamon

1 teaspoon sesame

1 tbl spoon tomato paste

A pinch of curry powder

First put a pan on stove then pour oil in it and add chicken in it.  Let it

Juje Kabab or Chicken Kebab

Iranian KababJoje kabab or Chicken Kebab

Ingredients

One kilogram chicken

One big onion

1 teaspoon turmeric

2 teaspoon salt

A pinch of black pepper

A pinch of red pepper

A pinch of cinnamon

1\2 glass of lemon juice

2 tbl spoon olive oil

3 tbl spoon yogurt

First cut ckickens in 5 Centimeters pieces.  Cut onion in half then slice it in narrow pieces.  Put all of the ingredients in a bowl and let it stay for about a day in refregrator.  The next day, put chickens on  some skewers and grill it.  You can bake it on coal fire or if you couldn't do this, try cooking in oven.  To do so, bring appropriate container then brush a little oil on it and put chicken skewers on it and let it bake for about 30 minuts until chickens colour turns to white and golden as it bakes completely.

It can be eaten with rice or bread as you like it.  This Kebab is really soft and unique.  Enjoy it.😉

Pasta in an Iranisn style

Ingredients

One average potatoe

200 Grams ground meat

3 tbl spoon tomato paste

One big onion

200 Grams Pasta

1 teaspoon salt

1 teaspoon turmeric

A pinch of pepper

First peel onion and chop it then pour some oil in a pan then add onions and fry it until its colour changes to golden about 20 minutes.  Pour water in a pot and put it on fire and add salt and a tbl spoon oil.

Let it on fire until it starts boiling then break pasta in three pieces an put it in boiling water and let it stay for 7 minuts.  

Put ground meat on onions and add salt, turmeric and pepper and fry it until meat changes it's colour.

Fried fish

I write here two kinds of fried fish that can be eaten with bread as a food or as Iranian do, you can eat fish with Sabzi Polo that I will learn it latter.

First one:

An average fish for example trout

Half a glass of lemon juice

A pinch of salt

1\2 teaspoon turmeric

1 tbl spoon olive oil

1/2 teaspoon black pepper

Kotlet, Iranian Kebab

 

Kotlet

Kotlet is a kind of Iranian Kebab fried in pan.  It is a main dish serve with yogurt, vegetables, salad and Dough which is an Iranian drink.  Making Kotlet, you will need following ingredients:

1 middle size onion

3 big potatoes

1 egg

220 Grams ground meat
